Apple iOS new Structure of Photo Folder DCIM (YYYY__MM) on Windows PC?
If you have updated your iOS device, iPhone, iPad to latest iOS 14.6 then you might see a major change in how DCIM folder is structure in the iOS now. The Photo Folders using File Explorer Windows 10 is named differently in the latest iOS versions.
Earlier if you connect an iOS device to Windows computer, in file explorer you will see DCIM folder with subfolders following a pattern of 100APPLE, 101APPLE, 102APPLE, etc. But after the update to iOS 14.6 when connecting one of Apple devices (running iOS 14.6), you will notice the pattern seems to be YYYY__MM (e.g. 2013__01 and 2021__07).

Some Apple users are finding this change very useful as it help to check photos as per month they are taken ON, when searching for a picture, it might be faster to see a large folder all at once ,and want an option to keep the folder structure
But the changes did not last longer, in the iOS 14.7 the changes are again reverted back and DCIM folder is now renamed in same older way like 100APPLE etc.
The update was a very "short-term" fortunate step in the right direction, but it seems they have reverted it, and thus back to making things difficult.
How to change DCIM folder structure in Apple device when connected to PC:
The way Photo folder are organised is completely in control of Apple and it seems that Apple did not intend for you to access the DCIM folder directly, but rather to import your pictures to your computer using a specific app (like Photos or Preview on a Mac, or Windows Photos on Windows PCs). So they have reverted back the changes as per their requirements. There is no way for the users to revert/ change the folder structure on DCIM folder.
All we can hope is in the next update of iOS 14 have month wise folder structure as iOS 14.6. But Apple may not prioritize it for user experience as this is not the Apple expect users to access the photos.
